About The Farm
  • Chiroso is a natural mutation first discovered in Urrao, Antioquia, and has quickly become one of Colombia’s most celebrated emerging varietals. Known for its cold tolerance, high yields, and remarkable cup quality, it has earned multiple victories in the Cup of Excellence and continues to gain traction among producers across regions like Quindío, Nariño, Risaralda, Cauca, Tolima, and Huila. In the cup, Chiroso stands out for its layered complexity, often revealing delicate floral tones alongside bright citrus notes.
  • This lot was processed using EF2, a multi-stage fermentation method developed by Felipe and Carlos Arcila. The cherries begin with 24 hours of aerobic fermentation before being sealed in bags for a sequence of anaerobic stages. These carefully managed steps intensify the development of sugars and acids, resulting in a coffee that is bold and fruit-forward, with striking sweetness, depth, and body.

Chiroso was once believed to be a mutation of Caturra due to its short stature and light green leaves, but genetic studies have since revealed a deeper connection to Ethiopian landrace varieties, linking it back to the birthplace of coffee and shedding light on its distinctive character. Compact and well-suited to high-altitude conditions, Chiroso is easier to manage and harvest, offers strong yields, and shows resilience to cooler mountain climates, making it a practical choice for farmers. At the same time, its exceptional cup quality sets it apart in the specialty coffee market, where its unique story and remarkable flavour continue to capture attention.
