About The Farm
  • Wilder Lazo’s journey into coffee began in 2017, when he started helping his father on their family farm in the mountains of San Adolfo, Huila. With deep roots in coffee through his family,Wilder took an ambitious leap into specialty coffee, bringing with him a background in genetics and a relentless curiosity for learning. Early on, he launched a varietal program on the farm—now home to over a dozen unique coffee varieties sourced from around the world.

Staycation / Colombia 300g

This lot is SL28, a Kenyan variety that has adapted beautifully to Colombia’s climate. Wilder applied his signature natural anaerobic process here: the cherries are fermented anaerobically in sealed plastic bags for 200 hours, with the addition of selected yeast strains to build complexity. After fermentation, the coffee is carefully dried on raised beds for 15 to 20 days,then stabilized in GrainPro bags for over a month to even out moisture and enhance flavour clarity.The result is a vibrant, expressive cup—showcasing Wilder’s dedication to both experimentation and precision, and a prime example of Huila’s innovative edge in specialty coffee.

Not good for me.

This was the poorest flavor coffee I have had from Rosso. I will leave 1 star as it realize coffee flavor is very subjective. I will stick to 2 Wheel going forward.

Great summer coffee

Very nice coffee. Excellent as espresso but shines in pour over. Please keep in the rotation.

I ordered this coffee out of sheer curiousity

I ordered this coffee out of sheer curiousity. It is sweet and quite tasty but the high acidity levels curdled my cream which was a turn off. Switched to a rum cream after that though and it's like those things were always meant to go together.
