About The Farm
  • Ramon Pablo Chalez is a first-generation coffee producer working alongside his family in Aldea
    Com Jacaltenango, high in Guatemala’s Huehuetenango region.
  • His farm, Los Pablos, is named for his family, who manage every aspect of production together. Coffee is their sole livelihood, and the dedication shows in the quality of their work.
  • Ramon began growing coffee 20 years ago, after initially planting basic grains like corn and beans. Thanks to microcredits, he was able to expand his coffee production. But the journey hasn’t been without hardship—low prices once forced his children to leave school. These challenges fuel his commitment to quality and his hope for a better future through coffee.

Honey, Hunny / Guatemala

During the harvest, Ramón carefully selects only the ripest cherries, returning for multiple picking passes. The cherries are depulped the same day they’re picked, then fermented in wooden crates for three days. After fermentation, the coffee is dried on a patio over the course of four days.
