This coffee is part of Daterra's Masterpiece collection. Masterpiece's are a small part of the farm where Daterra will test new ways of producing coffee. This is where new unusual varietals, processing methods, drying techniques and other experiments are done.

This cup of Laurina is delicate but it's flavour is complex. There is a phosphoric and malic acidity, reminding us of berries such as blueberries and blackberries, but also stone fruits like peach! And because Laurina is naturally low in caffeine, there is a remarkable sweetness that comes through.

Daterra is one of the most sophisticated coffee operations we've ever had the pleasure of visiting. Daterra is located near the city of Patrocinio, in the state of Minas Gerais, Brazil. This is the classic and famed Cerrado region of Brazil, where the fertile land is flat and proven ideal for coffee.

Daterra's beautiful, coffee-producing systems have turned the farm into an intensive network of lots, which are all monitored individually. Many have automated irrigation systems to ensure ideal nutrients and water make it to the plants themselves.

When it comes time to harvest, Daterra will send members of the team to different lots to evaluate the cherry. They will also harvest small batches to strategize on when to harvest each individual varietal and ensure peak timing. The quality team will then make decisions on how to utilize each of these coffees and where on the menu they'll be used.

This coffee's fermentation starts as whole cherries in stainless steel tanks. Followed by spending 8 days on patios to dry and then 30 hours into a drum drier to finish the process.

Once your order is received, it will be processed and shipped in 1-3 days.

Can I put my used bag in the city compost?
Putting these bags in the city of Calgary's compost is not recommended, due to the current processing facility. However, you can compost the outer lining in a healthy home compost (see further down the page for for info).

Alternative
