    This coffee is anything but ordinary, boasting complex and funky notes of banana, orange marmalade, and boozy apple cider. Its sweet and juicy acidity is complemented by a medium and creamy body. Whether enjoyed as a pour-over or experienced as an espresso, this coffee promises a delicious and exciting flavor journey

    To create this exceptional coffee, the fermentation process takes place over 240 hours in the Fermzilla, with CO2 control. This is followed by a total of 20 days of direct drying on African beds, with a 10-day interruption to bring the humidity level to 18%. Finally, the beans are dried for 10 more days until they reach their optimal moisture level.

    • Located in the High Mountains Region in the center of the state of Veracruz, Mexico, presents a unique and admirable model of sustainable and diverse coffee production. Situated in the municipality of Ixhuacán de los Reyes, the farm's elevation at 1420 meters above sea level and its positioning on the 19th parallel north confer it with a temperate climate averaging 17 °C and an annual rainfall of about 1,650 millimeters. This climate is conducive to coffee cultivation and contributes to the unique characteristics of your coffee.
    • The region's ecosystems, predominantly Pine-Oak Mountain Forests and the Niebla (cloud forest) or Mesophilic Forest, are rich in biodiversity yet face threats to their survival. Your farm’s practices play a crucial role in conserving these vital ecosystems.
    • Our commitment to quality and environmental stewardship is evident in your cultivation of up to 21 coffee varieties, each managed in well-established, georeferenced lots. This meticulous approach ensures specific care for each variety, enhancing both quality and sustainability.
    • The farm's agroecological principles are commendably reflected in its design, which integrates a diversified shade canopy composed of fruit trees like avocado, lemon, orange, macadamia, peach, passion fruit, and lychee, as well as timber trees such as oak, pine, sweetgum, and cedar.
