    In this specific lot of CR95, the fermentation process spans 144 hours, taking place within GrainPro bags with precise temperature control to manage the fermentation/oxidation. Subsequently, the coffee is subjected to a total of 25 days of direct drying on African beds. This drying period is strategically interrupted for 9 days, allowing the coffee to reach a humidity level of 21%, and is then completed over the course of 8 additional days. This methodical approach to processing contributes to the distinctive characteristics of this CR95 coffee.

    About the Farm

    • Located in the High Mountains Region in the heart of the state of Veracruz, Mexico, specifically in the municipality of Ixhuacán de los Reyes, our farm thrives at an average elevation of 1,420 meters above sea level. Situated north of the continent along the 19th parallel, the farm enjoys a temperate climate with an average temperature of 17°C and an annual rainfall averaging 1,650 millimeters.
    • The region is home to diverse ecosystems, including Pine-Oak Mountain Forests and, most notably, the Niebla or Mesophilic Forest (cloud forest), recognized as one of the planet's most biodiverse yet threatened environments.
    • Our unwavering commitment to quality has driven us to cultivate up to 20 distinct coffee varieties. These varieties are thoughtfully distributed across well-defined and georeferenced lots, allowing us to provide precise management tailored to the unique needs of each variety. Adhering to our agroecological principles, we continually enhance the farm with diversified shade trees, including fruit trees (avocado, lemon, orange, macadamia, peach, passion fruit, lychee), timber trees (oak, pine, sweetgum, cedar), and native trees. This strategic planting ensures improved microclimatic conditions and ecosystem functioning, contributing to the environmental preservation of the region and promoting food sovereignty while respecting the local community.
    • La Joya offers two lines of coffees: Experimental and Gema. The Experimental line explores innovative processing techniques, often in their first year of implementation. In contrast, the Gema line features well-established and successful structural processing techniques.
    • Samuel Ronzon, a third-generation coffee producer, leads the operation in Veracruz, Mexico. He partners with his wife, Gloria, a PhD candidate in Ecology and Biotechnology Sciences. Together, they focus on producing specialty coffees intentionally fermented to enhance flavor in the cup. The farm boasts a diverse collection of 21 coffee varieties, promising exciting developments in the years to come.
