About The Farm

San José de Lourdes, in San Ignacio, Cajamarca, is a highland district of smallholder farms strung along ridges and humid valleys near the Ecuadorian border. Elevation, regular rainfall and mixed agroforestry (with plenty of native shade) support slow ripening and the sweet, clean profiles for which the area is known.

New Wave / Peru

Pache is a traditional Arabica varietal originating in Guatemala, where it emerged as a natural mutation of Typica and became valued for its compact plant structure, which suits steep, mountainous terrain and makes it easier to manage in the field. In the cup, it stays close to Typica’s profile, offering a clean, balanced expression with soft sweetness, gentle acidity, and subtle notes like caramel, mild citrus, light florals, and a tea-like finish. While it is relatively low-yielding and lacks strong disease resistance compared to modern hybrids, Pache continues to be grown in legacy plots for its consistency, clarity, and the quiet elegance it brings when cultivated and processed with care.
