About The Farm
  • This coffee comes from a group of smallholder producers in Nariño, based in the regions of Sandoná and Chachauy. Each farmer ferments their coffee on-farm for 24 hours before delivering it to a shared solar drying facility. Drying the coffees together under the same conditions creates a consistent regional profile. After drying, the coffee is stabilized in GrainPro bags for 125 days prior to milling, allowing the flavours to fully settle and integrate.
  • Cherries undergo a 24-hour mucilage fermentation, followed by a thorough wash. The coffee is then dried on patios in a communal solar dryer, where lots are dried together to promote uniformity. After drying, the coffee rests during an extended stabilization period before milling, resulting in a clean, balanced, and well-integrated cup.

Pink Lady / Colombia

Smallholder producers in Nariño are overwhelmingly family-based, farming tiny plots—often under two hectares—on steep, high-altitude terrain between 1,500 and 2,300 meters above sea level, where volcanic soils and slow cherry maturation create coffee of exceptional complexity. These growers largely rely on traditional varieties like Bourbon and Caturra, hand-picking cherries and managing small-scale processing themselves, while cooperative networks help them access specialty markets and secure higher prices.

Historically isolated, they have gained international recognition through programs like the Colombia Cup of Excellence, and many now balance coffee with other crops, maintaining diversified, subsistence-plus-market farming. Despite challenges such as limited infrastructure and environmental pressures, Nariño smallholders combine centuries-old practices with collective organization, producing some of Colombia’s most celebrated coffees.
