About The Farm

Brazil
Helcio has dedicated a significant part of his life to the coffee industry, beginning at the age of 15. In 1976, he married Glycia Pereira Carneiro, and together, they took over the management of the Santa Lucia farm. During that time, the focus was primarily on coffee volume rather than quality. Access to knowledge, technology, and information about specialty coffee markets was limited.
Colombia
The Bayter family’s journey at El Vergel farm began in 1995 with avocado cultivation, making it one of the country’s most productive farms. After a 2006 crop crisis, Martha Bayter diversified into coffee, planting Catimore and Red and Yellow Caturra. Guided by coffee enthusiast Nelson Moya, they explored pulping and fermentation techniques and earned Rainforest certification by 2014–2015. In 2016, expert Miguel Jimenez helped them introduce Geisha, Java, Pacamara, Red Bourbon, and Laurina, with the first harvests in 2017 marking a milestone. The farm modernized further in 2018 with aerobic and anaerobic processes and silos for storage, establishing a reputation for innovation. Today, the Bayters conduct advanced research on fermentation, experiment with new processes, and cultivate over 28 varietals, becoming the first Colombian farm to develop the koji fermentation process, transforming green coffee production.

Ethiopia
Banko Chelchele sits in the Gedeo Zone of southern Ethiopia, within the Gedeb woreda of the SNNPR. This region is famous for producing some of Ethiopia’s most expressive coffees, thanks to its rich volcanic soil, high elevation, and ideal microclimate. The community’s deep agricultural knowledge, passed down through generations, has helped Chelchele earn a global reputation for quality. Coffee here is more than a crop—it’s a shared heritage and a central part of daily life, shaping both the economy and the rhythm of the community.

Every year, our roastery team plans the Winter Spice blend months in advance, tasting, testing, and balancing coffees until the right combination emerges. The goal is simple: to capture the feeling of the season in a cup.


From Brazil, Helcio Carneiro Pinto’s Yellow Bourbon lays the foundation with smooth, nutty sweetness that anchors the blend. From Colombia, Elias and Shady Bayter’s Natural Anaerobic Caturra introduces a touch of fruit and spice, adding lively brightness to the cup. And from Ethiopia, the smallholder producers of Banko Chelchele contribute their washed heirloom coffee, lending floral aromatics and a clean, graceful finish. Together, they create a cup that feels like a fireside gathering: sweet, spiced, and endlessly comforting.
