This is one of three lots we purchased from Allan this year and we're loving the flavour clarity. It's a black honey process, which means nearly 100% of the mucilage is left in tact with the coffee parchment. The name honey process comes from the intensity of the stickiness from that fruit pulp. As it dries, its important that its constantly rotated to promote even drying, and thats the case for the full seventeen days this coffee was dried - being rotated between raised African beds and shade covered patio.
This is the third year that Don Joel has been in operation as a micro-mill and his quality blew us away. We were very impressed with the cleanliness and attention to detail that Allan showcased with his coffees. We are so excited to have brought in three separate lots processed in different ways: yellow honey, red honey and a natural process. Each of these coffees possess different flavour characteristics thanks to the variation in processing method.
